Easy spinach soup with amaranth

Prep time: 25 minutes


  • 1 package (12 oz.) of frozen spinach

  • 1 tbsp. of butter

  • 2 cubes of chicken bouillon

  • 4 cups of water

  • Salt

  • Pepper

  • 2 tbsp. Huautli amaranth


  • Add 1 cup of water to your blender, then add all the contents of the frozen spinach package, followed by the remaining 3 cups of water.

  • Blend everything until the content is liquefied.

  • Add a tablespoon of butter to a cooking pot and turn it on to medium heat.

  • Add the contents from the blender to the pot.

  • Add the chicken bouillon cubes, salt and pepper to your taste.

  • Cook on high heat and stir occasionally for fifteen minutes or until content boils.

  • Serve and add tablespoon of Huautli amaranth as topping.
