Peanut Butter Chocolate Amaranth Cookies

Prep time: 20 minutes

Ingredients:

· 1 cup of Huautli Amaranth Flour

· 6 tablespoons of cocoa

· ½ tablespoon of baking soda

· 2/3 soft or melted butter

· 2 eggs

· 1 ½ tablespoon vanilla extract

· 1 ½ tablespoon sugar

· 2/3 cup of peanut butter chips

Instructions:

1. Heat oven to 350 degrees

2. Stir together flour, cocoa and baking soda.

3. Beat butter and sugar in large bowl with mixer until well blended. Add eggs and vanilla; beat well.

4. Gradually add flour mixture, beating well. Stir in peanut butter chips. Drop by rounded teaspoons onto ungreased cookie sheet.

5. Bake 8 to 9 minutes. Cool slightly; remove from cookie sheet. Cool completely. Makes approximately 6 – 8 cookies.
